Russell Millman

Manager

Meet Russell, our Landlord. Russ has been in the company since 2023. With a career in hospitality spanning over 20 years, it's safe to say he knows a couple things about running a pub. In his spare time you will find Russ probably at work (as he is a workaholic!) or spending time with his children.

As the General Manager of the Chalk Hare, Russell is very much the beating heart of the place. If something’s happening — at the bar, behind the scenes, or anywhere in between — chances are Russell’s already on it, usually with a knowing grin and a rum recommendation ready to go.

Minni

Senior Deputy Manager

Our events superstar and resident Peroni expert, Minni has been with the company since 2020, starting off as a fresh-faced waitress. Somewhere between carrying trays and charming guests she made her way up through the ranks (we suspect through hard work and a steady supply of coffee).

Known for her friendly character, quick wit, and ability to keep everything running smoothly even on the busiest nights, she is the glue that holds the team together. We're incredibly proud to have watched her grow - and even more glad she stuck around. Just don't challenge her to carry too many plates at once...she will win.

Jeffrey Ross

Deputy Manager

Jeff is our Deputy Manager, bringing an abundance of experience and calm leadership to the team. Originally from Sri Lanka, he’s passionate about great hospitality, loves his cricket, and never says no to good Italian food. A steady and knowledgeable presence, Jeff leads by example every day

Jada

Deputy Manager

Jada is our Deputy Manager, calm and enthusiastic, with a love for pasta, white wine, reading and musicals. She enjoys spending time with her golden doodle Harley and thinks canoe slalom is pretty cool—skiing on rapids, basically.

Zara

Deputy Manager

Zara is our Deputy Manager — keeping the pub running smoothly while still finding time for a city break, a crisp pint, or a well‑made cocktail. When she’s not leading the team, she’ll be off spending time with her dog Hugo (the real VIP). Approachable, organised, and always up for a laugh, Zara strikes the perfect balance between getting the job done and keeping the vibe right.

Jodie

Restaurant Supervisor

One of Jodie’s standout qualities is her curiosity and eagerness to learn — something reflected perfectly in her fun fact. She has travelled to Japan and is currently trying to learn the Japanese language, which says a lot about her openness, dedication, and interest in new cultures. This willingness to challenge herself and embrace something completely new is the same attitude she brings to her role at work.

Elise

Supervisor

Elise is our social media queen, spreading positivity wherever she goes. Creative, passionate and proud of everything she does, she brings energy and care to every post and project. With a natural eye for detail and a genuinely uplifting presence, Elise plays a key role in showcasing who we are and what we do best

Angela

Supervisor

Ang lives in Buntingford with their partner, Simon, and their dog, Patsy. They have spent most of their life working in hospitality and enjoy gardening, long walks, and upcycling. Ang is half Chinese and half Scottish and grew up with horses, competing through the Pony Club from a young age. One of their more memorable life moments includes getting married by Elvis in Las Vegas.

Hayley

Bar/Waiting

Hayley is a superb waitress with years of bar and hospitality experience — smooth in service, calm under pressure, and brilliant with guests. A true professional… unless chocolate is involved, in which case all bets are off. If there’s chocolate nearby, Hayley will find it — and probably deserve it.

Nico

Bar/Waiting

Normally found behind the bar, Nico brings quick wit, charm, and plenty of personality to every shift. Always good for a laugh while keeping things running smoothly, he’s a favourite with both guests and the team. Fun fact: when he’s not pulling pints, Nico is outnumbered at home by three cats and six chickens — make of that what you will.

Emily

Bar/Waiting

Emily is a hardworking member of our front of house team and a budding young footballer away from work. Full of energy, always willing to graft, and great with guests, she brings the same determination to the floor as she does to the pitch.

Maisie

Bar/Waiting

Maisie is a proud mum and a superstar waitress. When she’s not looking after guests, she loves spending time with the kids and enjoying the odd tipple in the sunshine. Always friendly and always smiling.

Karen

Bar/Waiting

Karen is our lovely breakfast waitress who helps start everyone’s day with a smile. Family‑orientated, friendly, and always welcoming — when she’s not at work, she loves travelling and exploring new places.

Olivia

Bar/Waiting

Olivia is one of our lovely waitresses, always friendly and hardworking on shift. Outside of work, she enjoys a quiet gin, spending time with her cat, and focusing on her studies as she works towards a future in veterinary care. Caring, dedicated, and a great presence in the team.

Jannah

Bar/Waiting

Jannah is a happy, bubbly, member of our team with a passion for looking after guests. Always positive and full of energy, she loves creating a great atmosphere—and enjoys a well‑earned glass of prosecco in her downtime.

Ellie

Bar/Waiting

Ellie has a real love for Irish cuisine — especially a proper spice bag — and if there’s music on, chances are she’s up dancing. Recently promoted to aunty life, she’s absolutely loving it and never misses a chance to talk about it. Full of energy, great fun to be around, and always bringing good vibes to the team.

Max

Bar/Waiting

Max is a cracking barman with a real passion for properly shaken cocktails — none of that half‑hearted stuff here. When he’s not perfecting his mixology, you’ll find him enjoying a well‑earned drop of Guinness. Solid behind the bar, full of enthusiasm, and always up for a laugh, Max brings great energy to every shift.

Shelley

Bar/Waiting

Shelley is a larger‑than‑life, bubbly character with many years of hospitality experience under her belt. Always welcoming and full of energy, her smile can light up a room and instantly put guests at ease. Passionate, personable and full of heart, Shelley brings warmth and joy to every shift.

Jacob

Restaurant Team Member

Jacob studies Maths, Physics, and Design & Technology at A Level — which explains a lot. Calm under pressure, sharp at problem‑solving, and hands‑on in his approach, he takes busy moments in his stride. Outside of work, he’s also an avid badminton player, bringing the same focus and energy to the court as he does on shift.

Rianna

Restaurant Team Member

Friendly, energetic, and always ready with a smile. With a love for all things pink, she brings her bright personality to every shift. When she's not serving drinks, she's hard at work studying to become a nurse, driven by her genuine passion for helping others. Whether she's behind the bar or hitting the books, she puts care and positivity into everything she does.

Jeremy is a hardworking Sous Chef who takes real pride in creating great food. Passionate about his craft, he enjoys nothing more than being in the kitchen and sharing quality dishes with others. Outside of work, Jeremy values family time just as much as his time behind the stove.

Roy is one of our Sous Chefs, known for a sense of humour like no other and an infectious love of music and a good laugh. Passionate about producing superb food, he brings experience, energy and positivity to the kitchen. No matter how busy service gets, Roy always keeps the team smiling and spirits high.

Sous Chef

Geo is a Sous Chef with a quick wit and great sense of humour, bringing positivity and experience to the kitchen every day. An experienced and reliable pair of hands, he’s passionate about good food and keeps the team smiling—especially when there’s a cappuccino involved.

Commis Chef

Amberley is a Commis Chef with a bright personality and a great work ethic in the kitchen. She loves her music, enjoys a drink in the sunshine, and is always up for a good laugh with friends. Bringing positive energy wherever she goes, Amberley is a joy to have as part of the team.

Linda

Chef de Partie

Linda is our Pastry Chef and resident dessert queen, taking care of all things sweet. An integral part of the kitchen operation, she brings skill, consistency and creativity to every dish. Passionate about pastry and detail‑driven, Linda plays a key role in making sure every service finishes on a high note.

Matt

Chef de Partie

Matt is our no‑nonsense Chef de Partie — solid on his section, calm in the heat, and always delivering the goods. Reliable, detail‑driven, and a proper grafter. Exactly who you want on the pass during a busy service.

Ishmael

Kitchen Porter

Ishmael is one of our KPs who’s made the jump from education and project management into hospitality — something he’s genuinely passionate about. Always positive, always smiling, and happy to crack on with the day, he brings great energy to the team.

Connor

Kitchen Porter

Connor is our KP and keeps the kitchen running smoothly, no matter how busy it gets. A big fan of all things fitness, he brings plenty of energy to every shift and never shies away from hard graft. Always reliable, always moving, and a key part of keeping the whole team on track.

Neil

Gardener

Neil is our dedicated gardener with a genuine love for all things nature. Passionate about creating and caring for green spaces, he takes pride in keeping everything looking its best. When he’s not in the garden, Neil is an avid motorbike enthusiast, always happy talking engines and the open road.

Lawrence

Housekeeper

Lawrence takes real pride in keeping everything spotless — our go‑to housekeeper for a reason. On his days off, he loves nothing more than a relaxing road trip to switch off and unwind.
